When you are stuck between what horse breed to buy because you like multiple, or what horse is the best for racing, it all ends up to you. This applies to tack, as well.
When buying a horse, you have to ask yourself these questions:
If you are having problems with jumping, you want a horse with good Strength. If you are having a problem with turning quickly enough, consider a horse with good Agility. Speed should be able to be "fixed" as you level up and get better tack. If you have problems with your horse slowing down and speeding up quickly, get a horse with some Discipline in their breed.
Make a list of your favorites horse colors.
Make a list of what features you like to see in horses.
Eventually, it may boil down to one or a few horses. If needed, you can ask other players what horse you should get. You do not need to take the first step, but if your current horses don't seem in sync to you as you play, you should take this step to help you improve. It is always good to get horses with different stats, even if they don't fit your playstyle, it will help expand your experience with different ways of riding in the game. So, if you have one or two horses that "fit" your riding style in the game, you should definitely start getting horses with different breed stats.
When buying tack, you should consider swiftness (nearly always) and the stat you are needing more of/having trouble with. Endurance is generally not really important since as you level up it increases well enough that it shouldn't matter much, unless you like exploring hard-to-get-to places. Looks are important to consider too, if you're that type of person. From there, I believe you should be able to go on. However, if you're just looking for tack with a good look, then you should only need to worry about the looks.
Horseshoes are important, and good because they don't really make a difference in your look, so make sure to pick up a horseshoe that tailors to your riding style in-game. You can find horseshoes in Valedale, beside Elizabeth's house. The horseshoe you make with Conrad may even fit your riding style already, so if that's the case, then you may just want to use it everytime you ride.
(A small edit: People consider Arabians, Pintabians, Icelandics, etc the "fast" horses due to the fact that they have added Discipline and Agility. With the added Discipline, especially when maxed with good tack, your horse will get a head-start due to them getting to a full gallop (or run) faster, and when they get stopped by an obstacle, they will be able to recover their former speed faster. Agility lets them turn better, like I said before, and gives you an advantage with being able to quickly turn and not hit an obstacle. If they do hit an obstacle, their Discipline will help save them. Due to this, it gives these breeds the illusion of being "faster", when in reality it is just their riders' skill (and stats) and the fact that their Discipline and Agility is probably better than yours.)
